I’m a complete chia pudding fanatic and love trying new spins on it, whether that means new flavor combinations or experimenting with different types of milk (coconut milk, almond milk, etc.). I typically start with my tried and true base vanilla chia pudding recipe and take off from there.
Since my kids love to eat chia pudding for breakfast, I decided to try a yogurt chia pudding and couldn’t believe how well it turned out. The texture is perfectly thick and creamy. I opted to use natural yogurt for this and sweetened it with fresh fruit a bit of honey. It’s great to have a jar of this on hand in the fridge for a super fast and kid-friendly breakfast.
While this pudding can absolutely be served on its own, I like using it as the base for a breakfast bowl, as pictured above. It can be topped with fresh fruit and granola for a fun and easy breakfast or snack.
Raspberry Yogurt Chia Pudding
Ingredients
1 cup natural yogurt
1 banana
1/2 cup raspberries
1 teaspoon honey (optional)
3 tablespoons chia seeds
Directions
- Mash together bananas, raspberries, and honey in a bowl.
- Add yogurt to the fruit and mix well.
- Add chia seeds and mix to avoid clumps.
- Let set in the refrigerator overnight (or for at least 3 hours).
