Strawberry Nice Cream


We have had several heatwaves here in Northern California recently, our time in the kitchen has quickly shifted from baking to making frozen desserts like this strawberry “nice cream”! If you haven’t already tried making “nice creams”, they are a healthy, no-churn ice cream alternative, which typically use frozen fruit as a base.

For this nice cream, I used bananas as the base. I love using bananas because they lend not only natural sweetness, but also a wonderful creamy texture to the nice cream, which resembles the texture of soft serve ice cream. This is one of our favorite things to make during the summer because it’s such a quick, easy, and healthy treat.

A few reasons to love nice cream:

  • They are quick and easy to make, made entirely in the blender, no churning required
  • They are a healthy alternative to ice cream, using mainly frozen fruits and with no added sugar
  • They are incredibly versatile! You can make any flavor or combination that you want
  • They are a great way to use any bananas that you have that might be going bad! Simply place your peeled brown bananas in a freezer-safe bag and store in your freezer to make nice cream later.

How to make strawberry nice cream

To make this nice cream, I used frozen strawberries, frozen bananas, and milk. That’s it! You start by placing all ingredients into the blender and blending on high. At first, you’ll get a sand-like consistency like in the photo below.

Use a spatula to scrape down the sides of the blender and blend again. If the mixture is too dense and not moving in the blender, add a little bit more milk. Continue scraping down the sides as needed and blending until the consistency begins to resemble that of soft serve ice cream.

Once it’s gotten to that point, you are ready to serve! The nice cream will be a bit softer than ice cream consistency immediately after coming out of the blender, so if you prefer it to be a bit more solid, you can put it in a freezer-safe container and place it back in the freezer for 30 – 40 minutes (not too long or it will freeze into a solid block).

After you’ve made the nice cream, the possibilities are endless! I have used it so far to make banana splits, nice cream sundaes, even nice cream sandwiches with homemade cookies.

Ingredients

  • 1 cup frozen bananas

  • 1/2 cup frozen strawberries

  • 1/4 cup milk of choice

Directions

  • Place all ingredients into a blender or food processor and blend on high.
  • Periodically, stop the blender to scrape down the sides. If the mixture isn’t moving enough, add a bit more milk as needed.
  • Continue to blend, When the mixture reaches the consistency of soft serve ice cream, it is ready to serve.
