Rainbow Pizza


Lately I’ve been looking for ways to make our family meals a little bit more fun and whimsical for the whole family and this rainbow pizza definitely did the trick. The kids were absolutely in awe of this meal – I’ve never seen them so excited at the sight of vegetables! The best part is that I was able to put this together in 15 minutes or less, and there’s nothing better to me than a meal that my kids are excited about and that I can get on the table quickly.

For this pizza, I started with a prepared pizza crust that I found at Trader Joe’s as the base. I used Rao’s tomato sauce (our go-to marinara, I have it on hand at all times!), and then sprinkled shredded mozzarella cheese over the sauce.

The next step was looking at what vegetables we had in the fridge and luckily, we had enough of a variety of colors that I was able to make it work with what we had. The vegetable prep can even be done ahead of time, if you chop up vegetables for the week and keep them in the fridge. Rainbow Veggie Options

  • Red: Red bell peppers, tomatoes
  • Orange: Orange bell peppers, carrots, butternut squash, orange tomatoes
  • Yellow: Yellow bell peppers, corn, yellow squash, yellow tomatoes
  • Green: Zucchini, green bell peppers, spinach, broccoli, peas, asparagus
  • Purple: Red onions, purple potatoes, eggplant, beets, red cabbage, purple carrots

Not only was this pizza a hit because it looked fun, but the combination of vegetables was delicious as well! My two-year-old, who has been on a veggie strike recently, happily ate more vegetables in one sitting via this pizza than he has in a very long time, which I am also chalking up to a win. Remember those Skittles ads, “Taste the Rainbow”? This gives it a whole new meaning.

Rainbow Pizza

Ingredients

  • 1 prepared pizza crust

  • 1/4 cup marinara sauce

  • 1 red bell pepper, diced

  • 1 yellow bell pepper, diced

  • 1 zucchini, diced

  • 1/2 red onion, chopped

  • 1/2 cup shredded mozzarella cheese

Directions

  • Preheat oven to 400 degrees.
  • Top pizza crust with marinara sauce and spread evenly across the crust.
  • Spread mozzarella cheese evenly across the crust as well, then top with veggies in desired pattern.
  • Bake pizza on a baking sheet in the oven for 10 minutes. Let cool for 5 minutes before slicing.
