Elsa Ice Cream Cake

Our daughter Ava has been asking whether it’s her birthday yet every week since her little brother’s birthday in November. This seems to be the first year that she has felt genuine excitement in anticipation of her special day. She requested a “cooking party” (no doubt, she’s my kid!) so we scheduled a kids cooking class at a great local kitchen and for the first time, invited all of her classmates to celebrate with us. She couldn’t wait!

Two weeks before her scheduled party, California received shelter-in-place orders as a result of the COVID-19 pandemic. Needless to say, it was a tough blow for our soon-to-be 4 year old, as she’d been looking forward to her special day for months. We went back to the drawing board for her birthday plans, but there was one thing she had asked for, which I knew I could still deliver on – a “mint chocolate chip ice cream Elsa cake”.

The Inspiration

I was inspired by a doll cake that my own grandmother made for me one birthday. To this day, that cake is the only birthday cake that I’ve had (over thirty-some-odd years) that I remember. It’s such a fond memory that I knew I wanted to recreate it for Ava and this seemed like the perfect opportunity to do so.

What You’ll Need

To make this cake, here is what you’ll need:

If you don’t have a doll cake pan, you may be able to use a standard medium sized bowl, though it will not have a hollow center to fill.

The Process

The first step of this process is to bring your ice cream out of the freezer and let it stay at room temperature for about 1 hour until very soft. While the ice cream is out, line the whole doll cake pan with large strips of plastic wrap. Be sure to leave plastic wrap hanging out of the pan so that you can pull it out easily later. Next, you’ll pour the ice cream into the pan lined with plastic wrap and place it in the freezer for 2 hours or until the ice cream is completely set.

As it sets, crush your Oreo cookies and mix with melted butter. When the ice cream is set, remove the pan from the freezer. Press part of the Oreo mixture into the bottom of the cake to form a bottom crust. Next, turn it over onto a plate and pull on plastic wrap to remove the hardened ice cream from the pan. (If you have a hard time getting the cake to come out of the pan, run it under some warm water to help it come loose.)

Next, fill the hole in the middle of the cake with the Oreo cookie mixture. Then, remove legs dress and legs from the Elsa doll and the top half of the doll into the Oreo mixture in the center of the cake, so that it is standing upright. Return the cake on the plate to the freezer.

While the cake is in the freezer, mix 2 cups of whipped cream with blue food coloring to create a light blue color. In a separate bowl, mix the other 2 cups of whipping cream with more blue food coloring to create a darker blue color.

Remove the cake from the freezer and spread the light blue whipping cream to cover the ice cream and cookie crust. Place in the freezer for about 15 minutes to allow cream to set. Then, place dark blue whipping cream into the piping bag with a star tip. Remove the cake from the freezer and pipe on the bodice of the dress any desired decorations on the dress. Return to the freezer and allow it to set until ready to serve!

Ava absolutely loved this cake! She and her brother kept “visiting” it in the freezer throughout her birthday, in anticipation of eating it at her birthday dinner later that day. It was certainly one of the highlights of a very successful quarantine birthday!

Ingredients

  • 1 gallon ice cream

  • 1 1/2 ounces Oreo cookes (1/2 package)

  • 2 tbsp butter, melted

  • Elsa doll, with dress and legs removed

  • 4 cups of whipped cream (or Cool Whip)

  • Blue food coloring

Directions

  • Leave ice cream out at room temperature for about 1 hour or until softened.
  • Line a doll cake pan or a medium-sized mixing bowl with plastic wrap and pour in melted ice cream. Place in freezer and set for 2 hours or until ice cream has hardened.
  • Crush Oreo cookies and mix with melted butter. Remove ice cream from the freezer and line bottom of the cake with Oreo mixture, creating a bottom crust.
  • Turn cake pan over onto a plate and pull plastic wrap to remove ice cream from the pan. Remove and discard the plastic wrap.
  • Fill middle hole with Oreo mixture and set top half of Elsa doll in the center on top of the cake. Return the cake to the freezer for 15 minutes.
  • Distribute the whipped cream into 2 separate bowls, with 2 cups in each bowl. Add a small amount of food coloring to one bowl and fold to create a light blue color (do not over mix!) Add more food coloring to the other bowl to create a darker blue color.
  • Remove cake from the freezer and spread light blue whipped cream evenly to cover the whole ice cream cake. Place in freezer and allow cream to set for 15 minutes.
  • Place dark blue whipped cream into a piping bag with a star tip. Remove cake from freezer and decorate the bodice and dress with piped dark blue cream. Place back into the freezer until ready to serve.
