French Toast Sticks


Weekend mornings are my favorite part of the week these days. The kids pile into our room and laze around on our big bed while I get up and have a quiet moment to myself in the kitchen to prepare breakfast. Last Saturday, while in the kitchen we had some bread that needed to be used and I realized that the kids had never had French toast!

We make a lot of pancakes and waffles, but for some reason French toast hadn’t made it into our breakfast rotation, even though I had loved it as a kid. I went to work on creating this healthier version of the classic breakfast staple, which uses whole wheat bread and no refined sugar.

The Process

To ensure that the French toast doesn’t end up soggy, it’s best to use bread that has been dried out. To achieve this, I like to toast the bread on a medium setting before getting started. Once ready, it’s time to make the custard. In a shallow bowl, combine milk, egg, vanilla, cinnamon, maple syrup, and salt and soak the bread in the custard for about 1 minute on each side.

Next, heat coconut oil over medium heat. When hot, add the bread and cook for 2 – 3 minutes on each side or until golden brown. After transferring the cooked French toast onto a plate, I cut it across to form five even sticks. The kids loved eating it in this form, since they could easily pick them up with their hands (and we know everyone loves a finger food!). If you plan to serve with any dipping sauce, these make them great for dunking as well.

I topped ours with a light drizzle of maple syrup and fresh berries. This was a huge hit (both kids cleaned their plates), so it is definitely now a part of our breakfast rotation!

Ingredients

  • 2 slices whole wheat bread

  • 1 egg

  • 3/4 cup milk of choice

  • 1 tsp maple syrup

  • 1/8 tsp vanilla

  • 1/8 tsp cinnamon

  • 1/8 tsp salt

  • 1 tsp coconut oil

Directions

  • Toast bread in a toaster or oven.
  • In a shallow bowl, mix together egg, milk, maple syrup, vanilla, cinnamon, and salt.
  • Soak bread in the custard for 1 minute on each side.
  • Over medium heat, heat coconut oil. When hot, add bread and cook for 2 – 3 minutes on each side (or until golden brown).
  • Cut bread into sticks, add your favorite toppings, and enjoy!
