Perfect Chocolate Chip Cookies

This week, I’m excited to share a recipe inspired by the book I Am Enough, written by Grace Byers and illustrated by Kemurah A. Bobo. I Am Enough is a beautiful book of affirmation. The poetic language of the book reinforces a message of self-confidence and celebrates the many differences that make each child unique.

The plate that I created this week is inspired by the beautiful cover art of the book, depicting a child with a calm and confident inner self. I chose to feature a chocolate chip cookie because it is one of those foods that doesn’t need any dressing up (no icing or fancy sprinkles), it’s perfect in its own right.

This particular chocolate chip cookie recipe is my personal favorite (and I’ve tried many!) These cookies come out chewy, yet crisp on the bottom, and have just the right amount of sweetness.

The Perfect Chocolate Chip Cookie

Ingredients

  • 3/4 cup brown sugar

  • 3/4 cup white sugar

  • 1 cup butter, room temperature

  • 1 tsp vanilla extract

  • 1 egg

  • 2 1/4 cup flour

  • 1 tsp baking soda

  • 1 tsp salt

  • 2 cups chocolate chips

  • 1 cup nuts (optional)

Directions

  • In a bowl, cream together butter and sugar until smooth. Add vanilla extract and egg, then mix until combined.⁣
  • In a separate bowl, whisk together baking soda, salt, and flour.⁣
  • Add flour to the wet mixture in parts, until well combined, then fold in chocolate chips.⁣
  • Use an ice cream scoop to drop dough onto a greased sheet pan and bake at 350 degrees for 10 minutes.⁣
