Chocolate Coconut Bliss Balls


Last Sunday on my Instagram page, I launched a series called Diverse Story Sunday. Every Sunday for the foreseeable future, I will be posting a recipe inspired by a book with diverse characters. This is one of the ways that I hope to continue to use Bringing Up Foodies as a place for us to stay engaged and educated on how to raise healthy, adventurous, and *inclusive* little foodies. The Snowy Day

For the first #diversestorysunday installment, I chose to make something inspired by The Snowy Day by Ezra Jack Keats. This book was one of the first book purchases that I made while pregnant with my son. It’s a sweet, simple story about Peter, a young Black boy exploring his neighborhood on a snowy winter’s day. The beautiful collage illustrations and childlike wonder with which Peter sees the world are captivating and have made this one of our go-to bedtime books for years.

I chose to make chocolate coconut bliss balls to resemble the snowball that Peter attempts to save in his pocket for later. The red background represents Peter’s iconic red winter coat. What are bliss balls?

Bliss balls are a healthy treat typically made with energy boosting foods, such as dates and nuts. Bliss balls typically require no cooking or baking as they are made in a blender or food processor. I love to make these because they are incredibly versatile and they make a great healthy afternoon snack or guilt-free sweet treat.

In my The Snowy Day inspired bliss balls, I used:

  • Roasted almonds
  • Medjool dates
  • Coconut oil
  • Cacao powder
  • Salt
  • Shredded coconut (for a snowball effect)

Making these is incredibly simple. You start by adding almonds into a blender or food processor and blending until it resembles the consistency of course sand.

Next, you add in the dates, coconut oli, cacao powder, and salt, then blend until well combined. You may need to stop the blender periodically to scrape down the sides to ensure that everything is well mixed. Once the mixture begins to clump, you can stop blending.

Fill a bowl with the shredded coconut, then use your hands to form balls with the mixture and roll them in the shredded coconut until well coated. Once coated, set aside and repeat until all of the mixture has been used.

Chocolate Coconut Bliss Balls

Ingredients

  • 1/2 cup roasted almonds

  • 1/2 cup Medjool dates, pitted

  • 1 1/2 tbsp coconut oil

  • 1 tbsp cacao powder

  • Pinch of salt

  • 1/2 cup shredded coconut

Directions

  • Add almonds into a blender or food processor and blend until it resembles the consistency of course sand.
  • Add Medjool dates, coconut oil, cacao powder, and salt. Blend well, stopping to scrape down the sides if needed. Continue to blend until the mixture begins to clump.
  • Place shredded coconut in a bowl. Form mixture into balls and roll in coconut until well coated.
