Watermelon Italian Ice


It’s Memorial Day weekend here in the U.S., which unofficially marks the beginning of the Summer season. With 80+ degree weather, bike rides, and even a trip to our local beach, it’s definitely beginning to feel like Summer has arrived.

To beat the heat this long weekend, we’ve already made this watermelon Italian ice twice! I can’t describe how refreshing this frozen treat is on a hot day and best of all, it’s incredibly easy to make with only 2 (yes TWO) ingredients. This basically tastes like summer in a glass.

How to make it

The first step is to take watermelon and cut it into roughly 1 inch cubes until you have about 2 cups of watermelon prepared. Once cut, place the watermelon in a freezer-safe container (a plastic ziploc bag works just as well) and freeze it for about 2 hours or until it’s frozen solid.

Once the watermelon is froze, add it to your blender along with the juice from 1/2 a lemon and blend it on high. The result will resemble the consistency of sand.

If there are still chunks of watermelon that have not yet been blended, use a spoon to scrape down the sides and pulse in the blender until the watermelon is fully broken down. Once that happens, it’s ready to serve. Spoon into serving cups and enjoy!
