My kids absolutely love mango, it just might be their favorite fruit. When getting them to try new flavors, I will often try to include familiar ingredient into the mix, which seems to make them more inclined to give it a try. That was my intent when first adding mango into this salsa, but what I found is that the mango not only made them more inclined to eat it, but the sweetness from the fruit elevated the whole dish and I was hooked. I could not stop eating it.
We live in California, so we’re lucky to have fresh avocados available year-round. This salsa is one of my favorite ways to use them, because the avocado adds a creamy texture and flavor to this bright, fresh salsa.
This salsa is one of my favorites because it is so versatile! Here are a few ways that I’ve served it:
- As a topping for fish or chicken
- As a dip for tortilla chips
- As a side salad
Ingredients
1 mango, diced
1 avocado, diced
4 medium tomatoes, diced
1 jalapeno pepper, seeded and minced
1/4 red onion, chopped
4 cloves garlic
1/2 cup fresh cilantro, chopped
1 teaspoon salt
2 tablespoons fresh lime juice
3 tablespoons olive oil
Directions
- Combine all ingredients and mix thoroughly.
- Refrigerate for 30 mins to allow flavors to combine, and then serve chilled.
