Easy Frozen Yogurt Cups


Yogurt with berries is a staple part of breakfast in our house, but the kids often leave part of their yogurt unfinished. I recently started taking the leftover yogurt and fruit from their breakfast and pouring it into silicon baking molds to repurpose as a dessert for the kids later in the day and it has been a huge hit!

To make these, I recommend filling the silicon baking cups only about half way, so that the cups are not too thick for kids to bite through when frozen. You also don’t want these to be too big because the longer it takes to eat them, the more time the yogurt has to melt, making for a messy meal time!

We chose to use Ellenos Greek Yogurt for our frozen yogurt cups, because we had it on hand, but it would work just as well with plain yogurt blended with fruit and a sweetener of your choice (e.g. bananas, honey, agave, etc.).

Yogurt cups prior to freezing, baking cups should be filled only halfway.

The best part about these cups? Not only can they serve as an easy dessert or snack, but they can also be used as a guilt-free, make ahead breakfast option. Our kids were ecstatic when I told them they could have one for breakfast the other day, I’ve never seen them run to the breakfast table faster!

Easy Frozen Yogurt Cups

Ingredients

  • 1 cup yogurt of choice

  • 1 cup fruit (if yogurt is not fruit flavored)

  • 1 tsp honey (optional)

  • Fruit for topping

Directions

  • Blend yogurt, fruit, and honey together until well combined. Taste to adjust sweetener if needed.
  • Pour mixture into silicone baking cups until filled about halfway.
  • Top with fresh fruit.
  • Place in freezer and let set for 3 hours or more.
