Blueberry Chia Jam


We got to our local farmers’ market every weekend to stock up on fruits, and particularly on fresh berries, for the week. While we typically go through them, sometimes at the end of the week we end up with extra berries that need to be used quickly. That’s how I first discovered this chia jam recipe, which is a great way to use an extra fruit or berries that you have on hand.

Chia acts as both a thickening agent as well as a great source of omega 3 fatty acids, antioxidants, and fiber. This jam is a great one to have on hand because it’s so versatile.

Here are a few ways that we like to use this blueberry chia jam:

  • As a topping on pancakes or waffles
  • Spread on toast
  • Layered with yogurt and granola to create a yogurt parfait
  • As a topping on ice cream
  • Spread on banana bread

Blueberry Chia Jam

Ingredients

  • 2 cups blueberries

  • 1/2 teaspoon honey

  • 2 tablespoons chia seeds

Directions

  • In a saucepan over medium heat, cook blueberries and honey for 3 – 5 minutes, or until the blueberries start to burst.
  • With a fork, mash the blueberries until it forms a sauce.
  • Reduce heat to low and add chia seeds, stirring constantly to prevent clumps. Continue to cook for 7 – 10 minutes or until jam gets to your desired consistency.
